Ayurvedic Healing Vegetable Stew

Ayurvedic Recipe : Vegetable Stew

Ingredients:

  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves, minced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 small sweet potato, diced
  • 1 zucchini, diced
  • 1 cup chopped spinach
  • 4 cups vegetable broth
  • 1 cup cooked chickpeas
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh cilantro leaves for garnish

Instructions:

  • In a large pot, melt ghee over medium heat.
  • Add cumin seeds and coriander seeds and sauté until fragrant, for about 1 minute.
  • Stir in turmeric powder, grated ginger, and minced garlic. Cook for another minute.
  • Add chopped onion and sauté until it becomes translucent.
  • Add diced carrots, celery, sweet potato, and zucchini to the pot. Stir well to coat the vegetables with the spices.
  • Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15 minutes or until the vegetables are tender.
  • Add cooked chickpeas to the stew and cook for an additional 5 minutes.
  • Season with salt and freshly ground black pepper according to your taste.
  • Just before serving, stir in the chopped spinach and cook until wilted, for about 2 minutes.
  • Remove the pot from heat and let the stew rest for a few minutes.
