Ingredients

  • 1 cup of raw cashews
  • 1 cup of dried mango (unsweetened)
  • 1 tablespoon of grated fresh ginger
  • 1/4 cup of desiccated coconut (plus extra for coating)
  • 1 tablespoon of coconut oil
  • 1 tablespoon of maple syrup (optional, for added sweetness)
  • A pinch of salt

Method

  1. Prepare the Ingredients: Begin by soaking the dried mango in warm water for about 15-20 minutes to soften them. Drain the mango thoroughly after soaking.

  2. Blend the Ingredients: In a food processor, combine the soaked mango, raw cashews, grated ginger, desiccated coconut, coconut oil, maple syrup (if using), and a pinch of salt. Blend the ingredients until they form a sticky dough-like consistency.

  3. Shape the Energy Balls: Once the mixture is well combined, use your hands to roll small portions of the dough into bite-sized balls. If the mixture is too sticky, you can wet your hands slightly to prevent it from sticking.

  4. Coat with Coconut: Roll each energy ball in desiccated coconut until they are evenly coated. This adds a delightful texture and enhances the flavour.

  5. Chill and Serve: Place the energy balls on a baking tray lined with parchment paper and chill them in the refrigerator for at least 30 minutes to firm up.
