  • 1 tablespoon ghee (clarified butter) or coconut oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon fennel seeds
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 small piece of ginger, grated
  • 1 medium carrot, diced
  • 1 small zucchini, diced
  • 1 cup chopped leafy greens (spinach, kale, or Swiss chard)
  • 4 cups vegetable broth
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Freshly squeezed lemon juice (optional)
  • Fresh cilantro leaves for garnish

  • Heat ghee or coconut oil in a large pot over medium heat.
  • Add cumin seeds, coriander seeds, and fennel seeds to the pot.
  • Stir and sauté for a minute until the seeds become fragrant and slightly browned.
  • Add chopped onions, minced garlic, and grated ginger to the pot. Sauté until the onions become translucent.
  • Add diced carrots, zucchini, and chopped leafy greens to the pot.
  • Stir and cook for a couple of minutes.
  • Add vegetable broth to the pot and bring it to a boil.
  • Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the vegetables are tender.
  • In a small bowl, mix turmeric powder, cumin powder, and coriander powder with a little water to make a paste.
  • Add the spice paste to the pot and stir well to combine.
  • Simmer for an additional 5 minutes to allow the flavors to blend.
  • Season the soup with salt to taste.
  • Remove the pot from heat and let it cool slightly.
  • Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
  • If desired, add a squeeze of fresh lemon juice to enhance the flavor.
  • Ladle the soup into bowls and garnish with fresh cilantro leaves.
  • Serve warm and enjoy your Ayurvedic Detox Soup.
