Ayur Healthcare Detox Salad

Ingredients:

  • 2 cups mixed greens (spinach, kale, arugula, etc.)
  • 1 cup chopped cucumber
  • 1 cup grated carrots
  • 1 cup sliced radishes
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt and pepper to taste

Instructions:

  • In a large mixing bowl, combine the mixed greens, cucumber,  carrots, radishes, cilantro, and mint leaves.
  • In a small bowl, whisk together the lemon juice, olive oil, cumin powder, coriander powder, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss well to coat all the ingredients.
  • Sprinkle the pumpkin seeds and sunflower seeds on top of the salad.
  • Let the salad sit for a few minutes to allow the flavors to meld together.
