Ayurvedic Recipe : Vegetable Stew
Ingredients:
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon turmeric powder
- 1 teaspoon grated fresh ginger
- 2 garlic cloves, minced
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 small sweet potato, diced
- 1 zucchini, diced
- 1 cup chopped spinach
- 4 cups vegetable broth
- 1 cup cooked chickpeas
- Salt to taste
- Freshly ground black pepper to taste
- Fresh cilantro leaves for garnish
Instructions:
- In a large pot, melt ghee over medium heat.
- Add cumin seeds and coriander seeds and sauté until fragrant, for about 1 minute.
- Stir in turmeric powder, grated ginger, and minced garlic. Cook for another minute.
- Add chopped onion and sauté until it becomes translucent.
- Add diced carrots, celery, sweet potato, and zucchini to the pot. Stir well to coat the vegetables with the spices.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15 minutes or until the vegetables are tender.
- Add cooked chickpeas to the stew and cook for an additional 5 minutes.
- Season with salt and freshly ground black pepper according to your taste.
- Just before serving, stir in the chopped spinach and cook until wilted, for about 2 minutes.
- Remove the pot from heat and let the stew rest for a few minutes.
