Blend the Ingredients: In a food processor, combine the soaked mango, raw cashews, grated ginger, desiccated coconut, coconut oil, maple syrup (if using), and a pinch of salt. Blend the ingredients until they form a sticky dough-like consistency.
Shape the Energy Balls: Once the mixture is well combined, use your hands to roll small portions of the dough into bite-sized balls. If the mixture is too sticky, you can wet your hands slightly to prevent it from sticking.
