Spiced Mung Bean and Vegetable Khichdi for Weight Loss

Ingredients:

  • 1/2 cup split mung beans (moong dal), rinsed and soaked for 30 minutes
  • 1/2 cup basmati rice, rinsed
  • 1 tablespoon ghee or coconut oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon freshly grated ginger
  • 1/4 teaspoon asafoetida (hing)
  • 1 small carrot, diced
  • 1/2 cup green beans, chopped
  • 1/2 cup spinach leaves, chopped
  • 1 medium tomato, chopped
  • Salt to taste
  • 4 cups water
  • Fresh coriander leaves for garnish

Method:

  1. Prepare the Base: Heat the ghee or coconut oil in a large saucepan over medium heat. Add the cumin seeds and mustard seeds. Once they start to splutter, add the grated ginger, asafoetida, and all the ground spices (turmeric, coriander, and cumin). Stir for a few seconds until aromatic.
  2. Cook the Vegetables: Add the diced carrot, green beans, and chopped tomato to the pan. Sauté for 3-4 minutes, allowing the vegetables to soften slightly.
  3. Add the Mung Beans and Rice: Drain the soaked mung beans and add them to the pan along with the rinsed basmati rice. Stir well to coat with the spices and vegetables.
  4. Simmer the Khichdi: Pour in the water and add salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the mung beans and rice are tender and the consistency is slightly porridge-like.
  5. Finish and Serve: Stir in the chopped spinach leaves and cook for another 5 minutes. Garnish with fresh coriander leaves before serving.
