Delicious Ayurvedic Amla Chutney Recipe by Ayur Healthcare
Amla chutney is a delightful and nutritious condiment in Ayurvedic cuisine. Indian Gooseberry, also known as Amla, is a potent Ayurvedic herb known for its rejuvenating and health-promoting properties. This chutney is not only delicious but also packed with vitamins and antioxidants.
Ingredients:
- 250 grams fresh Amla (Indian Gooseberries), washed and deseeded
- 1 medium-sized onion, finely chopped
- 2-3 green chilies, chopped (adjust to taste)
- 1-2 teaspoons grated ginger
- 2-3 cloves of garlic
- 1 tablespoon jaggery or raw cane sugar
- 1 tablespoon tamarind pulp (soaked in water)
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- A pinch of asafoetida (hing)
- 1-2 tablespoons ghee or sesame oil
- Fresh coriander leaves, chopped
- Salt to taste
Instructions:
- Preparation of Amla:
- a. Wash the Amla thoroughly and cut them into small pieces, discarding the seeds.
- Cooking Amla:
- a. Place the Amla pieces in a pan with a little water.
- b. Cook on low heat until the Amla becomes soft and tender. Ensure the water evaporates during the cooking process.
- Making Amla Paste:
- a. Once the Amla is cooked, allow it to cool and then blend it into a smooth paste using a blender or food processor.
- Preparing the Chutney:
- a. Heat ghee or sesame oil in a pan on medium heat.
- b. Add cumin seeds and mustard seeds. Let them splutter.
- c. Add asafoetida, chopped green chilies, grated ginger, and garlic. Sauté for a minute.
- d. Add the finely chopped onions and sauté until they turn translucent.
- Mixing the Amla Paste:
- a. Add the Amla paste to the pan and mix well with the sautéed ingredients.
- b. Add tamarind pulp, jaggery or raw cane sugar, and salt. Mix and cook for a few more minutes until the chutney reaches the desired consistency.
- Garnish:
- a. Turn off the heat and let the chutney cool down to room temperature.
- b. Garnish with freshly chopped coriander leaves/ Pudina (Mint) or Tulsi (Holy Basil).
- Serving:
- a. Serve this delicious Amla chutney as a side dish with Indian meals or as a spread for bread or chapatis.
